What's remarkable about Roux Dat is they're able to churn out quality Cajun food from an unassuming little kiosk on a sidewalk in downtown Santa Cruz. Inside this booth is a man, from New Orleans it turns out, who is the cook, cashier and customer service rep. Your $10.50 buys a meal in a plastic bowl that comes with toasted bread. I had the gumbo on brown rice (shown here) and my wife got the jambalaya. Both dishes were good, but neither spicy, which was fine by us.
